We tried a new recipe tonight and really enjoyed it. Maybe you will too. It's simple, takes few ingredients, and can be ready in 15 minutes.
MOROCCAN CHICKEN
1 tsp ground cumin
1/2 tsp salt (it calls for kosher salt, but we didn't have any, so we used table salt)
1/4 tsp ground cinnamon
4 skinless, boneless chicken breast halves
1 Tbs oil
Stir together the cumin, salt, and cinnamon in a small bowl. Sprinkle over the chicken (or rub, as Braden did). Heat the oil in a large skillet on medium heat. Add the chicken and cook about 10-15 minutes or until done, turning once.
We served it over rice and it was really yummy. Of course, you could use couscous or quinoa too if you prefer, or any grain. Even mashed potatoes, if you were so inclined. But the chicken was done in the time it took to cook the rice, so it was perfect. Enjoy!

FINALLY we had this for dinner (after getting the chicken out to thaw on Friday but something kept coming up...). It was good! Medeterranian Couscous and Mandarin Spinach salad on the side...a whole whirlwind of flavors that don't usually come from my kitchen. thanks for the tip and meal planning!
