Eggless Wonderland

Taryn had her Dr. appointment to get the referral for the allergist. The good news is that her reaction (hives) should not get worse. He said those who react with hives usually don't suddenly change to reacting anaphalatically (if that's a word), and vice versa. So, she shouldn't really need medicine and we just need to avoid eggs for a few years until she outgrows it. We'll hopefully get in with the allergist soon and maybe he'll be able to determine what other allergies she has, if any.

My sister, Heidi, called and told us about using flax as an egg substitute. Fascinating! I then got online and found a wealth of information about how to substitute for eggs and found basic ways to do it. Since we have no flax and aren't really doing major cooking for Taryn yet, I decided to try making our apple cinnamon muffins eggless. All I had to do was mix some flour, water, baking powder, and oil and add it to the recipe. I was worried how they would turn out, but they were great! I almost liked the texture better than with eggs! And Taryn loved them, so we were all happy.

Eggs is a tricky thing to avoid. Way to experiment and find new ways to make your favorites :)

Those look really yummy...you really liked it better without eggs? Like, better enough that if, given the option, you would choose no eggs? What if you were taking them to someone...were they so good, that you'd do no eggs? Only curious if I should put it in my cookbook...though, it's probably a good idea to get the recipe from you anyways to honor my eggless friends, too.
